Stuffed Tomato Halves Recipe - Cooking Index
1 cup | 146g / 5.1oz | Green pepper - (abt 3/4 cup) - chopped (medium) |
4 cups | 250g / 8.8oz | Tomatoes (large) |
4 | Green onions - sliced | |
1/3 cup | 13g / 0.5oz | Quaker Oat Bran cereal - uncooked |
1/4 cup | 49g / 1.7oz | Egg Beaters 99% egg substitute - (equal to 1 egg) |
1/4 teaspoon | 1.3ml | Basil leaves - crushed |
2 tablespoons | 30ml | Chopped fresh parsley |
(or 1 tbspn dried parsley flakes) |
Preheat oven to 350 degrees.
In a small saucepan, simmer green pepper in a small amount of water 2 to 3 minutes. Drain and reserve. Slice each tomato in half crosswise. Scoop out pulp; drain tomato halves upside down.
Chop pulp; place in large bowl. Add green pepper and remaining ingredients except parsley. Place tomato halves cut side up in 13 1/2- by 8 3/4-inch baking dish. Fill each half with about 1/3 cup stuffing mixture. Sprinkle parsley over top. Bake 30 minutes.
Serving size is 1 tomato half.
