Pineapple Sorbet Recipe - Cooking Index
1 cup | 237ml | Water |
1/4 cup | 49g / 1.7oz | White sugar |
1/4 cup | 40g / 1.4oz | Brown sugar |
2 1/2 cups | 365g / 12oz | Pineapple - chopped |
1/4 cup | 59ml | Lime juice |
1 tablespoon | 15ml | White rum - optional |
Sweet star fruit or kiwi slices to garnish |
Make a syrup by combining the water and both sugars in a non-corrosive pot and bring to a boil. Simmer for 5 minutes. Remove from the heat and let cool. Puree the pineapple in a blender or a food processor and strain through a fine sieve. Combine the syrup, pineapple, lime juice and rum. Freeze following the instructions for making Lemon Sorbet.
Garnish with sliced star fruit or kiwi.
VARIATION: Pina Colada Sorbet. Substitute 1 c canned coconut cream for the sugar syrup; do not cook. Combine with the remaining ingredients and continue as above.
