Peanut Butter-Oatmeal Bites Recipe - Cooking Index
1 1/4 cups | 78g / 2.8oz | Old-fashioned oats |
2 tablespoons | 30ml | Unsalted butter - softened |
1/2 cup | 99g / 3.5oz | Crunchy peanut butter |
1/4 cup | 40g / 1.4oz | Packed light-brown sugar |
1 cup | 198g / 7oz | Egg - beaten (large) |
2 tablespoons | 30ml | Milk |
1 teaspoon | 5ml | Vanilla extract |
3/4 cup | 109g / 3.8oz | Pitted dates - chopped |
1 cup | 62g / 2.2oz | All-purpose flour |
1/2 teaspoon | 2.5ml | Baking powder |
1/2 teaspoon | 2.5ml | Salt |
Preheat oven to 350F.
Spread the oats on a baking sheet, and toast for 5 minutes, stirring once. Let cool.
In a mixing bowl, stir together the butter and peanut butter, Stir in the brown sugar.
Stir in the egg, then the milk and vanilla. Stir in the dates, then the oats.
Stir the flour, baking soda and salt together, then add to the peanut butter mixture, stirring just to combine.
Press the dough into ungreased miniature muffin tins filling them about 3/4 full.
Bake until lightly browned, about 20 minutes. Turn out of the pans, and let cool.
Store in self-sealing plastic bags.
