| 2 cups | 474ml | Half and half |
| 3 cups | 187g / 6.6oz | All-purpose flour |
| 1 teaspoon | 5ml | Salt |
| 1/2 cup | 99g / 3.5oz | Sugar |
| 1 tablespoon | 15ml | Baking soda |
| 1 cup | 237ml | Creamy peanut butter |
| 1 cup | 146g / 5.1oz | Chopped peanuts |
| 1 cup | 146g / 5.1oz | Chopped bananas |
| Vegetable oil - for frying | ||
| 1/4 cup | 49g / 1.7oz | Confectioners' sugar |
Combine the eggs, half-and-half, flour, salt, sugar, and baking soda in a large mixing bowl. Blend to a smooth batter. Add the peanut butter and blend. Fold in the peanuts and bananas.
Heat oil to 350F. Drop the batter by tablespoonfuls into the hot oil and fry for about 5 minutes, or until golden brown. Drain the fritters on paper towels. When cool, lightly sprinkle with confectioners' sugar. This recipe serves 8.
