Peach Sorbet Recipe - Cooking Index
1 cup | 237ml | Water |
1/2 cup | 99g / 3.5oz | Sugar |
8 cups | 1896ml | Peaches (small) |
1 | Lemon - juice of | |
1 tablespoon | 15ml | Marsala or peach brandy - - optional |
Make a syrup by combining the water and sugar in a non-corrosive pot and bring to a boil. Simmer for 5 minutes. Remove from the heat and let cool.
Puree the peaches in a food processor or blender to yield about 1 c. Combine the syrup, peaches, lemon juice and marsala.
Freeze according to the instructions for making Lemon Sorbet.
Serve over fresh raspberries or blackberries.
