Paula Jane's Sweet Tea Recipe - Cooking Index
| See Directions |
1 Cup of sugar to every two quarts of water(1 gallon/2 cups) 1 Family sized tea bags to every quart of water(1 gallon/4 tea bags) Boil the water, then add tea bags and let steep for 4 minutes. Any longer adds too much tannin, thus making the tea bitter. Remove tea bags, add sugar. Let cool to room temperature(do not refrigerate or add ice it in order to do this)before serving. I found out this to be the key to making good iced tea. When I was little nobody refrigerated the iced tea. It sat on the counter in a great big gallon jar until it was all gone, which was real quick. A fresh batch was made each meal. Pour over ice in a great big iced tea glass, add lemon to suit.
Now there are all the other old time ways to do it with loose tea and sauce pans, but I won't go into that right now.
