2 1/2 cups | 156g / 5.5oz | All-purpose flour |
1 cup | 198g / 7oz | Sugar |
1 cup | 237ml | Molasses |
1 cup | 237ml | Boiling water |
1/2 cup | 99g / 3.5oz | Butter - softened |
2 | Eggs | |
2 teaspoons | 10ml | Cinnamon |
2 teaspoons | 10ml | Ginger - ground |
1 teaspoon | 5ml | Baking soda |
Icing sugar |
Preheat the oven to 350F. Grease and flour a 13 x 9-inch baking pan. Stir together flour, sugar, molasses, water, butter, eggs, cinnamon and ginger in a large bowl until smooth.
Dissolve baking soda in a little hot water and stir into batter. Spoon into pan.
Bake for 45 minutes, until a toothpick inserted into the center comes out clean.
Let cook slightly in the pan, then dust with icing sugar and cut into squares.
