Nutted Wild Rice

Type: Low Fat, Rice
Serves: 6 people

Recipe Ingredients

1 cup 160g / 5.6ozWild rice
5 1/2 cups 1303mlWater
1/4 cup 36g / 1.3ozPecan halves
1 cup 160g / 5.6ozYellow raisins
1   Orange rind - grated
1/4 cup 36g / 1.3ozChopped mint
4   Green onions - diced
2 tablespoons 30mlVegetable oil
1/3 cup 78mlFresh orange juice
1 1/2 teaspoons 7.5mlSalt
1   Freshly-ground black pepper

Recipe Instructions

Wash rice thoroughly. Place rice and water in medium saucepan. Bring to boil and simmer uncovered for 45 minutes. Rice should not be too soft. Drain and transfer rice to bowl. Add remaining ingredients and toss gently. Let stand for 2 hours. Serve at room temperature.

Serving size is 2/3 cup.
