Nutted Wild Rice Recipe - Cooking Index
1 cup | 160g / 5.6oz | Wild rice |
5 1/2 cups | 1303ml | Water |
1/4 cup | 36g / 1.3oz | Pecan halves |
1 cup | 160g / 5.6oz | Yellow raisins |
1 | Orange rind - grated | |
1/4 cup | 36g / 1.3oz | Chopped mint |
4 | Green onions - diced | |
2 tablespoons | 30ml | Vegetable oil |
1/3 cup | 78ml | Fresh orange juice |
1 1/2 teaspoons | 7.5ml | Salt |
1 | Freshly-ground black pepper |
Wash rice thoroughly. Place rice and water in medium saucepan. Bring to boil and simmer uncovered for 45 minutes. Rice should not be too soft. Drain and transfer rice to bowl. Add remaining ingredients and toss gently. Let stand for 2 hours. Serve at room temperature.
Serving size is 2/3 cup.
