1 cup | 62g / 2.2oz | Whole wheat pastry flour |
1 cup | 62g / 2.2oz | All-purpose flour |
2 teaspoons | 10ml | Baking soda |
2 cups | 474ml | Orange juice |
2 teaspoons | 10ml | Orange zest |
4 tablespoons | 60ml | Unsalted butter - room temp. |
1 cup | 198g / 7oz | Sugar |
3 cups | 594g / 20oz | Eggs - room temperature (medium) |
Spray 60 Madeleine molds with cooking spray.
In a medium mixing bowl, mix flours and baking soda together and set aside.
In a medium saucepan bring orange juice to a boil, remove pan from heat and allow to cool. In a small bowl mix orange juice and zest together and set aside.
In a large mixing bowl cream the butter and sugar together. Beat in eggs one at a time. Beat in flour mixture in thirds alternately with the orange-juice mixture.
Spoon 1 T batter into each prepared Madeleine mold, and bake in a preheated 350F oven for 10 to 15 minutes. Makes 60.
