Old-Fashioned Prune Whip Recipe - Cooking Index
2 cups | 474ml | Dried prunes - cooked, mashed |
2 teaspoons | 10ml | Lemon juice |
1 | Salt | |
1 teaspoon | 5ml | Lemon zest |
4 tablespoons | 60ml | Powdered sugar |
4 | Egg whites |
Pit prunes and mash. Blend in lemon peel and lemon juice, 2 tablespoons sugar and salt. To stiffly beaten egg whites, add remaining sugar, beating until mixed well. Fold in prune mixture gently.
Pile lightly into 1-1/2 quart baking dish. Bake at 350F for 20-30 minutes or until knife inserted in center comes out clean. Serve warm with custard sauce if desired.
