Old German Muffins

Recipe Ingredients

3/4 cup 148g / 5.2ozButter
1/2 cup 99g / 3.5ozSugar
2   Eggs; large
1 tablespoon 15mlRum
1 teaspoon 5mlVanilla extract
3 tablespoons 45mlMilk
1/2 teaspoon 2.5mlCinnamon
2 teaspoons 10mlBaking powder
2 1/4 cups 140g / 4.9ozFlour; unbleached
1/4 cup 23g / 0.8ozAlmonds; ground
1 tablespoon 15mlOrange rind; grated
1/4 cup 40g / 1.4ozRaisins; if desired

Recipe Instructions

Cream butter and sugar. Beat in eggs, rum, vanilla, and milk.

Mix cinnamon, baking powder, and flour. Add flour mixture to butter mixture.

Gently mix in almonds, orange rind, and raisins. Pour batter into greased muffin tins, filling half full.

Bake at 375F for 25 to 30 minutes, or until browned.

Makes 18 muffins.
