1/2 cup | 99g / 3.5oz | Egg Beaters 99% egg substitute - (equal to 2 eggs) |
1 tablespoon | 15ml | Lemon juice |
1 tablespoon | 15ml | Lemon rind |
4 tablespoons | 60ml | Water |
2 1/2 cups | 156g / 5.5oz | All-purpose flour |
1 teaspoon | 5ml | Cinnamon |
1 teaspoon | 5ml | Cloves |
1 teaspoon | 5ml | Allspice |
1 teaspoon | 5ml | Baking soda |
1 cup | 146g / 5.1oz | Dried fruit - chopped |
1 cup | 146g / 5.1oz | Nuts - chopped |
Preheat oven to 350 degrees.
In a large bowl, combine margarine, sugar, Egg Beaters, lemon juice, lemon rind, and water. In another bowl, combine flour, spices, and baking soda. Stir in the flour and spice mixture in several additions. Mix well. Stir in fruit and nuts.
Bake for 20 minutes in a 10 1/2- by 15-inch pan. Cut into 2- by 2 1/2-inch squares immediately. Do not remove from pan until cool.
