Mocha-Menthe Mousse Recipe - Cooking Index
1 1/2 cups | 355ml | Milk |
1 tablespoon | 15ml | Instant coffee granules |
1 tablespoon | 15ml | Crème de menthe |
1/8 teaspoon | 0.6ml | Mint extract |
1 | -- (3.4-ounce) choc. Fudge instant pudding and pie filling mix | |
1 1/2 cups | 355ml | Frozen whipped topping - thawed |
Garnishes: fresh mint sprigs - cocoa |
Process first 4 ingredients in a blender 2 minutes or until thickened. Pour into a bowl; gently fold in 1-1/4 cups whipped topping. Spoon into 4 individual dessert dishes; chill. Top with remaining 1/4 cup whipped topping, and garnish, if desired. Makes 4 servings.
To reduce fat and calories, substitute skim milk, 1 (1.4-ounce) package sugar-free chocolate pudding and pie filling mix, and reduced-calorie frozen whipped topping.
