Meringue Crust Recipe - Cooking Index
3 cups | 594g / 20oz | Egg whites - at room temperature (large) |
1/4 teaspoon | 1.3ml | Cream of tartar |
1/4 teaspoon | 1.3ml | Salt |
3/4 cup | 148g / 5.2oz | Sugar - superfine |
1/2 teaspoon | 2.5ml | Vanilla |
Spray 9" pie plate with vegetable oil spray. Combine whites, cream of tartar and salt in large bowl.
Beat to soft peaks. Gradually beat in sugar. Add vanilla.
Beat until stiff and shiny. Spread in pie plate. Using the back of a spoon form a decorative rim.
Bake 1 hour, 15 minutes at 275F until firm and crisp.
Cool on a rack.
