Maple-Cottage Cheese Squares Recipe - Cooking Index
Safflower oil - for coating pan | ||
2 1/2 cups | 365g / 12oz | Graham cracker crumbs - finely crushed |
1 teaspoon | 5ml | Cinnamon |
1/4 cup | 49g / 1.7oz | Date sugar |
1/4 cup | 59ml | Safflower oil |
1/4 cup | 59ml | Nonfat milk |
2 cups | 292g / 10oz | Nonfat cottage cheese |
1 cup | 146g / 5.1oz | Nonfat ricotta cheese |
1 tablespoon | 15ml | Melted butter |
3 tablespoons | 45ml | Maple syrup |
2 tablespoons | 30ml | Grated orange rind |
1 teaspoon | 5ml | Orange juice |
1. Preheat oven to 300F. Lightly oil an 8-inch-square baking pan.
2. In a large bowl combine graham cracker crumbs, cinnamon, date sugar, the 1/4 cup safflower oil, and enough milk to form a ball. Press into bottom of pan. Set aside.
3. In a blender or food processor, puree cottage cheese, ricotta, butter, maple syrup, orange rind, and orange juice. Pour into prepared pan and bake until firm (about 25 minutes). Remove from oven and let cool, then slice into squares.
Makes 16 squares.
