Maple-Coconut Rice Pudding Recipe - Cooking Index
2 cups | 320g / 11oz | Cooked rice |
1/3 cup | 30g / 1.1oz | Grated unsweetened coconut |
1 1/4 cups | 296ml | Skim milk |
1/4 cup | 82g / 2.9oz | Maple syrup |
1 1/2 teaspoons | 7.5ml | Cinnamon |
2 | Eggs |
Coat a 2-quart baking dish with nonstick spray, and add rice and coconut.
In a medium bowl, whisk the milk, maple syrup, cinnamon and eggs, and pour over the rice.
Stir to combine.
Bake, uncovered at 325F until set, 45 to 50 minutes.
