Maple Mousse Recipe - Cooking Index
| 3 | Egg yolks | |
| 3 | Egg whites - beaten stiff | |
| 1 cup | 328g / 11oz | Maple syrup |
| 1 | Heavy cream |
Separate eggs and add yolks to the syrup and cook until the mixture thickens. Cool.
Fold in whipped cream and egg whites.
Place in a mold, pack in 4 parts ice and 1 part salt and let stand for 4 hours, or pack and freeze in a tray or mold.
