Mango Flummery Recipe - Cooking Index
2 tablespoons | 30ml | Mangos - peel, slice (large) |
2 tablespoons | 30ml | Lemon juice |
1 cup | 237ml | Orange juice |
2/3 cup | 131g / 4.6oz | Sugar - or substitute |
1/3 cup | 78ml | Tapioca - quick cooking kind |
1/2 tablespoon | 7.5ml | Orange peel - grated |
Banana slices - optional |
In a blender or food processor, whirl mangos until pureed; you should have 3 cups.
Transfer puree to a 3 qt pan. Stir in lemon juice, orange juice, sugar, and tapioca.
Let stand for 5 minutes.; then bring to a full boil over med-high heat, stirring constantly.
Remove from heat; stir in orange peel.
Let cool for 15 minutes.; cover and refrigerate until softly set (about 2 hrs).
To serve, spoon flummery into 4 - 6 servings.
