Mandarin Chocolate Pudding Recipe - Cooking Index
| 1/2 | Hinoichi soft or regular tofu - drained | |
| 1 cup | 237ml | Nonfat milk - 1% milk or milk substitute |
| 1/4 teaspoon | 1.3ml | Orange extract |
| 1 | Instant chocolate fudge pudding & pie filling | |
| 1 | Mandarin oranges in light syrup - drained |
Blend tofu, milk & orange extract in a food processor bowl for 2 minutes or until velvety smooth. Add pudding mix and process 45 seconds longer.
Reserve 4 mandarin orange sections for garnish.
Stir remaining mandarin oranges into pudding.
Divide into 4 custard cups, topping each with an orange segment.
Chill 5 minutes (or longer) & serve.
