Mandarin Chocolate Pudding

Recipe Ingredients

1/2   Hinoichi soft or regular tofu - drained
1 cup 237mlNonfat milk - 1% milk or milk substitute
1/4 teaspoon 1.3mlOrange extract
1   Instant chocolate fudge pudding & pie filling
1   Mandarin oranges in light syrup - drained

Recipe Instructions

Blend tofu, milk & orange extract in a food processor bowl for 2 minutes or until velvety smooth. Add pudding mix and process 45 seconds longer.

Reserve 4 mandarin orange sections for garnish.

Stir remaining mandarin oranges into pudding.

Divide into 4 custard cups, topping each with an orange segment.

Chill 5 minutes (or longer) & serve.
