Macadamia Nut Crunchies

Recipe Ingredients

1   Eggs
2   Bananas - mashed ripe (medium)
1/3 cup 65g / 2.3ozButter - melted
1/4 cup 59mlPineapple fruit spread
1 teaspoon 5mlVanilla extract
1 1/4 cups 78g / 2.8ozFlour
1/3 cup 30g / 1.1ozCoconut - flaked unsweetened
1/2 teaspoon 2.5mlBaking powder
1/2 teaspoon 2.5mlSalt
3 1/2 oz 99gMacadamia nuts - chopped

Recipe Instructions

Preheat oven to 375.

Combine egg, banana, butter, fruit spread, and vanilla in medium bowl. Add flour, coconut, baking powder, and salt; mix well. Stir in nuts.

Drop tablespoonfuls of dough 2" apart onto lightly greased cookie sheets.

Bake 10-12 minutes, until lightly browned.

Cool on wire racks. Store in tightly covered container.
