Macadamia Nut Crunchies Recipe - Cooking Index

2 | Bananas - mashed ripe (medium) | |
1/3 cup | 65g / 2.3oz | Butter - melted |
1/4 cup | 59ml | Pineapple fruit spread |
1 teaspoon | 5ml | Vanilla extract |
1 1/4 cups | 78g / 2.8oz | Flour |
1/3 cup | 30g / 1.1oz | Coconut - flaked unsweetened |
1/2 teaspoon | 2.5ml | Baking powder |
1/2 teaspoon | 2.5ml | Salt |
3 1/2 oz | 99g | Macadamia nuts - chopped |
Preheat oven to 375.
Combine egg, banana, butter, fruit spread, and vanilla in medium bowl. Add flour, coconut, baking powder, and salt; mix well. Stir in nuts.
Drop tablespoonfuls of dough 2" apart onto lightly greased cookie sheets.
Bake 10-12 minutes, until lightly browned.
Cool on wire racks. Store in tightly covered container.
