Luscious Lemon Squares Recipe - Cooking Index
2 1/4 cups | 140g / 4.9oz | All purpose flour |
1/2 cup | 99g / 3.5oz | Powdered sugar |
1 cup | 198g / 7oz | Margarine - reduced cal |
4 | Eggs | |
1/2 teaspoon | 2.5ml | Baking powder |
1/2 cup | 99g / 3.5oz | Sugar - granulated |
1/2 cup | 118ml | Orange juice concentrate |
1/4 cup | 59ml | Lemon juice - fresh |
1 tablespoon | 15ml | Lemon zest + 1 tsp |
1/2 teaspoon | 2.5ml | Vanilla extract |
Preheat oven to 350F.
In a medium bowl stir together 2 cups flour, and 1/4 cup plus 2 tablespoons powdered sugar.
Cut the margarine into the mixture until crumbly.
Pat the dough into a 15 by 10 inch non-stick baking pan.
Bake the crust until set, 10 to 15 minutes.
Cool, then sprinkle with remaining 2 tablespoons powdered sugar and then cut into 48 squares.
