Lemon Poached Pears With Berry Pear Sauce Recipe - Cooking Index
Using ripe pears and sweet berries will enhance this dessert with delicate natural sweetness. This dish is inherently low in fat and calories, but the taste won't give it away.

4 tablespoons | 60ml | Fresh orange juice |
2 tablespoons | 30ml | Raspberry liqueur - such as Chambord |
Pears | ||
4 cups | 948ml | Water |
1/2 cup | 99g / 3.5oz | Sugar |
3 teaspoons | 15ml | Lemon juice |
2 teaspoons | 10ml | Lemon zest |
4 teaspoons | 20ml | Firm pears - peeled, cored (medium) |
Assembly | ||
Additional lemon zest |
Sauce: Combine the ingredients in a food processor or blender and process until smooth. Refrigerate until ready to serve.
Pears: In a large saucepan, combine the water, sugar, lemon juice, and zest. Bring to a boil. Reduce to a simmer and add the pears. Poach the pears for 10 to 12 minutes or until tender when pierced with the point of a sharp knife. Remove the pears from the liquid and cool slightly. Refrigerate pears in liquid until serving time (may be done overnight). The pears can be poached up to 2 days in advance. The sauce can be made 24 hours in advance.
Assembly: To serve, spoon pools of puree onto 4 individual plates. Stand the pears upright in the sauce and spoon remaining sauce on top. Garnish with lemon zest.
