Lemon Meringue Rice Recipe - Cooking Index
| 3 cups | 711ml | Milk |
| 1/2 cup | 80g / 2.8oz | Rice |
| 1/2 cup | 99g / 3.5oz | Sugar |
| 1 1/2 tablespoons | 22ml | Lemon juice |
| 1/2 | Lemon rind - grated | |
| 3/4 teaspoon | 3.8ml | Salt - to taste |
| 2 teaspoons | 10ml | Eggs (large) |
| 2 tablespoons | 30ml | Powdered sugar |
| 1/2 teaspoon | 2.5ml | Lemon juice |
Put in top of double boiler the 3 cups milk and 1/2 cup raw rice.
Cook over hot water until rice is soft, about 30-35 minutes
