Grasshopper Parfaits Recipe - Cooking Index
| 1/2 cup | 118ml | Heavy cream |
| 1 tablespoon | 15ml | Granulated sugar |
| 1 | Cream cheese - softened | |
| 1 1/4 cups | 296ml | Sweetened condensed milk - 14 oz can |
| 3 tablespoons | 45ml | Lemon juice |
| 3 tablespoons | 45ml | Green crème de menthe liqueur |
| 2 tablespoons | 30ml | White crème de cacao liqueur |
| 12 | Cream filled chocolate sandwich cookies - coarsely chopped |
In small mixer bowl, whip cream until soft. Add sugar; beat until stiff. In large mixer bowl, beat cream cheese until fluffy; gradually beat in sweetened condensed milk. STIR in lemon juice, and liqueurs. Fold in whipped cream; chill 20 minutes.
Do not stir. In parfait glasses, layer 1 tablespoon cookies and 1/4 cup filling. Repeat layers. Top with remaining cookies. Chill 4 hours.
Variations: Coffee: substitute coffee flavored liqueur for crème de menthe. Brandy Alexander: substitute 1/3 brandy for crème de menthe. Orange: Omit crème de cacao and substitute 1/4 cup orange liqueur for crème de menthe.
