Cut into 1/2" thick cubes | ||
3/4 cup | 177ml | Water |
1 tablespoon | 15ml | Honey |
1 cup | 237ml | Toasted walnut pieces |
3/4 cup | 120g / 4.2oz | Brown sugar |
1 cup | 198g / 7oz | Unsalted butter |
2 1/2 cups | 156g / 5.5oz | Rolled oats |
2 cups | 125g / 4.4oz | Flour |
1 teaspoon | 5ml | Baking soda |
1 teaspoon | 5ml | Vanilla extract |
2 tablespoons | 30ml | Milk |
Preheat oven to 350F.
In a 1-quart saucepan, combine dates, the water, and honey. Bring to a boil, reduce the heat, and simmer for 7 minutes. Cool for 10 minutes. Stir in walnuts. Reserve.
In a large mixing bowl, crumble together brown sugar, butter, rolled oats, flour, and baking soda. In a small bowl, mix vanilla and milk, then stir into dry ingredients to form a crumbly mixture.
Pat two thirds of the crumbly mixture onto the bottom of an 8-inch-square baking pan. Spread date mixture onto crumbs. Sprinkle remaining crumbly mixture on top.
Bake until lightly browned (35 to 40 minutes).
