Spicy Mango Ketchup Recipe - Cooking Index
| 1 | Red onion - diced fine | |
| 1 tablespoon | 15ml | Chopped garlic |
| 2 tablespoons | 30ml | Unsalted butter |
| 1 | Mango - diced | |
| 1/2 cup | 118ml | Rice wine vinegar |
| 1/4 cup | 59ml | Ketchup |
| 1/2 cup | 80g / 2.8oz | Brown sugar |
| 1 | Chipotle - pureed | |
| 1/2 tablespoon | 7.5ml | Ground ginger |
| 1/2 tablespoon | 7.5ml | Ground cinnamon |
| 1 teaspoon | 5ml | Ground cloves |
| Salt - to taste | ||
| Freshly-ground black pepper - to taste |
In a saucepan, sweat the onions and garlic. Add the mangoes and continue to cook for 3 minutes. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 5 minutes. Puree and season to taste with salt and pepper.
This recipe yields about ? cups of ketchup.
