Fruit Parfait Recipe - Cooking Index
1/2 | Hinoichi soft or regular tofu - drained | |
1 cup | 237ml | Nonfat milk - 1% milk or milk substitute |
1/2 teaspoon | 2.5ml | Pure almond extract |
1 | Instant vanilla pudding & pie filling - (3.4 oz.) | |
1 | Fruit cocktail - drained (16 oz.) |
Blend tofu, milk & almond extract in a blender or food processor for 2 mins. until smooth. Add pudding mix, blending 45 seconds longer.
Reserve 4 maraschino cherries from fruit cocktail for garnish.
Layer fruit cocktail & pudding into 4 parfait cups.
Top each with a cherry, chill 5 minutes (or longer) & serve.
