Fresh Fruit Medley Recipe - Cooking Index
1 | Apple - peeled and diced (small) | |
12 | Size bananas - sliced (medium) | |
1 | Orange - sectioned (small) | |
1/2 cup | 118ml | Seedless grapes |
1 tablespoon | 15ml | Frounceen orange concentrate; |
1/4 cup | 59ml | Low-fat yogurt |
2 tablespoons | 30ml | Part-skin ricotta |
1/8 teaspoon | 0.6ml | Ground ginger |
1/8 teaspoon | 0.6ml | Ground cinnamon |
1/2 teaspoon | 2.5ml | Pure vanilla extract |
1/2 teaspoon | 2.5ml | Pure vanilla extract |
4 | Walnut halves |
Place all fruit in a bowl and mix in frounceen orange juice concentrate. In a blender, combine yogurt, ricotta, ginger, cinnamon and vanilla. Portion the fruit into dessert bowls, top each with yogurt-ricotta sauce and garnish with a walnut half.
Other fruits may be substituted, such as melon, kiwifruit, strawberries, blueberries, pears, or pineapple. The fruit medley may also be served without topping.
