Fresh Fruit Medley

Recipe Ingredients

1   Apple - peeled and diced (small)
12   Size bananas - sliced (medium)
1   Orange - sectioned (small)
1/2 cup 118mlSeedless grapes
1 tablespoon 15mlFrounceen orange concentrate;
1/4 cup 59mlLow-fat yogurt
2 tablespoons 30mlPart-skin ricotta
1/8 teaspoon 0.6mlGround ginger
1/8 teaspoon 0.6mlGround cinnamon
1/2 teaspoon 2.5mlPure vanilla extract
1/2 teaspoon 2.5mlPure vanilla extract
4   Walnut halves

Recipe Instructions

Place all fruit in a bowl and mix in frounceen orange juice concentrate. In a blender, combine yogurt, ricotta, ginger, cinnamon and vanilla. Portion the fruit into dessert bowls, top each with yogurt-ricotta sauce and garnish with a walnut half.

Other fruits may be substituted, such as melon, kiwifruit, strawberries, blueberries, pears, or pineapple. The fruit medley may also be served without topping.
