3 cups | 480g / 16oz | Cooked rice - (brown short grain) |
3 cups | 711ml | Milk |
1/4 cup | 49g / 1.7oz | Sugar |
1 teaspoon | 5ml | Vanilla |
1/4 cup | 82g / 2.9oz | Rice syrup - (corn syrup) |
2 tablespoons | 30ml | Margarine |
2 teaspoons | 10ml | Lemon juice |
1 teaspoon | 5ml | Grated lemon peel |
1/2 teaspoon | 2.5ml | Ground nutmeg |
1/8 teaspoon | 0.6ml | Salt - optional |
16 oz | 454g | Canned sliced peaches drained, (in their own juice) |
Fresh peaches are better! Use 2 cups | ||

Combine rice milk and sugar in 3-qt. saucepan cook over medium heat until thick and creaming stirring often (25 min.). Add vanilla.
Pour into 4-qt. serving bowl. Heat syrup margarine lemon juice/peel nutmeg and salt.
Stir in peaches cook on low for 10 min. Spoon over rice pudding.
Serve warm or cold.
