Creamy Tropical Topping

Recipe Ingredients

1 cup	237ml	Crushed pineapple in juice - (8-oz. Can)
2/3 cup	157ml	Evaporated skim milk
1/2 cup	118ml	Frozen pine-orange banana juice - thawed concentrate
1 tablespoon	15ml	Grated orange peel
2 teaspoons	10ml	Cornstarch
6 oz	170g	Neufchatel - (light cream cheese), softened
2 tablespoons	30ml	Sugar

Recipe Instructions

In medium saucepan, stir together undrained pineapple, evaporated skim milk, juice concentrate, orange peel and cornstarch. Cook over medium heat, stirring constantly, until mixture boils and thickens.

Cool to room temperature. In small mixer bowl, beat Neufchatel cheese and sugar until creamy; gradually add pineapple mixture, beating until blended.
