Creamy Rice Pudding (Minute Rice) Recipe - Cooking Index
4 cups | 948ml | Milk |
1/4 cup | 49g / 1.7oz | Egg beaters substitute |
1 | Vanilla pudding filling ** | |
1 cup | 160g / 5.6oz | Dry minute rice |
1/4 cup | 40g / 1.4oz | Raisins - (optional) |
1/4 teaspoon | 1.3ml | Cinnamon |
1/8 teaspoon | 0.6ml | Nutmeg |
Use Jell-O brand pudding and pie filling (not instant, 4 serving size).
Gradually stir milk and egg into pudding mix in a sauce pan. Add rice and raisins. Stir over medium heat until mixture just comes to a boil. Pour into a serving bowl.
Hints: serve hot or cold sprinkled with cinnamon and nutmeg. For a creamier pudding, place plastic wrap on surface while cooling. Chill for 1 hour, stir. Makes about 10 servings.
