Corn Flake Crisps

Recipe Ingredients

1/2 cup 99g / 3.5ozButter - softened
1/2 cup 80g / 2.8ozLight brown sugar
1/2 cup 99g / 3.5ozSugar
1 cup 198g / 7ozEgg (large)
1 teaspoon 5mlVanilla extract
1 1/4 cups 78g / 2.8ozAll-purpose flour
1/2 teaspoon 2.5mlSalt
1/2 teaspoon 2.5mlBaking powder
1/2 teaspoon 2.5mlBaking soda
2 cups 125g / 4.4ozCorn flakes
2 1/4 cups 209g / 7.4ozSweetened coconut flakes
1/2 cup 73g / 2.6ozWalnuts - chopped

Recipe Instructions

Lightly grease baking sheet. Cream together butter and sugars. Beat in egg and vanilla.

Mix flour, salt, baking soda and baking powder.

Stir into creamed mixture. Stir in corn flakes, coconut and nuts.

Drop from teaspoon onto baking sheet two inches apart. Bake at 350F for 10 to 12 minutes. Cool slightly, then remove to cooling rack.
