Coffee Tortoni Recipe - Cooking Index
2 tablespoons | 30ml | Coconut - toasted |
2 tablespoons | 30ml | Chopped almonds - toasted |
1 | Egg white | |
1 teaspoon | 5ml | Instant coffee - heaping |
1/2 cup | 99g / 3.5oz | +2 tsp. Sugar |
1 cup | 237ml | Whipping cream |
1 teaspoon | 5ml | Vanilla extract |
1/8 teaspoon | 0.6ml | Almond extract |
Toast coconut and chopped almonds. Whip egg white with coffee; gradually add 2 teaspoons sugar. Whip cream; add remaining sugar, vanilla, and almond extract. Fold cream into egg mixture; add coconut and almonds. Pour into fluted paper baking cups. Sprinkle with additional coconut, if desired. Freeze 2 hours or more.
