Cinnamon-Spiced Pears With Creamy Feta Sauce Recipe - Cooking Index
4 cups | 948ml | Firm bosc pears - (1-1/2 pounds) (small) |
4 | Cinnamon sticks - (3-inch) | |

1 tablespoon | 15ml | Lemon juice |
1/3 cup | 78ml | Low-fat sour cream |
1/3 cup | 78ml | Vanilla low-fat yogurt |
1 tablespoon | 15ml | Crumbled feta cheese |
1/4 cup | 36g / 1.3oz | Amaretti cookie or vanilla wafer crumbs |
Remove stems from pears. Using a corer or knife, remove core from stem end, leaving bottom intact. Place 1 cinnamon stick into the cavity of each pear; set aside.
Combine honey and lemon juice in a small microwave-safe bowl. Microwave at HIGH 15 seconds or until thoroughly heated. Spoon 2 teaspoons honey mixture into the cavity of each pear, reserving remaining honey mixture.
Arrange pears in a vegetable steamer over boiling water; cover and steam 15 minutes or until tender. Remove pears, and let cool. Discard cinnamon sticks. Cut pears in half lengthwise.
Combine reserved honey mixture, sour cream, yogurt, and cheese; stir well. Place 2 pear halves on each of 4 dessert dishes; top each with 3 tablespoons cheese mixture, and sprinkle with 1 tablespoon of cookie crumbs.
Yield: 4 servings.
