Chocolate Tapioca Pudding

1 cup 198g / 7ozSugar
3 tablespoons 45mlTapioca
1/8 teaspoon 0.6mlSalt
3 8.3333333333333E+14/1.25E+15 cups 869mlMilk
1   Egg
2 oz 56gUnsweetened chocolate
2 teaspoons 10mlInstant coffee - (optional), up to 3
1 teaspoon 5mlVanilla

Recipe Instructions

Combine sugar, tapioca and salt in saucepan; stir in milk and beaten egg. Let stand 5 minutes. Add chocolate and instant coffee. Cook and stir over medium heat until mixture comes to a full boil and chocolate is well blended, about 15 minutes. Remove from heat and stir in vanilla. Cool for 20 minutes, stir. Chill.

Makes about 8 servings.
