2 tablespoons | 30ml | Unsalted butter - melted |

1/2 cup | 99g / 3.5oz | Unsalted butter - softened |
3/4 cup | 148g / 5.2oz | Sugar |
3 oz | 85g | Unsweetened chocolate |
1 teaspoon | 5ml | Vanilla |
1 teaspoon | 5ml | Peppermint extract |

1/2 cup | 118ml | Whipping cream |

Preheat oven to 350F
Mix chocolate cookie crumbs and melted butter. Press firmly into the bottom of an 8-inch Springform pan and bake for 7-8 minutes. Cool.
Cream butter and gradually add the sugar. Melt chocolate over double boiler. Add vanilla and peppermint extracts to butter. Slowly mix in melted chocolate. Add eggs, one at a time, and beat 3 minutes after adding each egg. Beat cream until it holds a firm peak.
Fold whipped cream into chocolate mixture. Gently spread over crust and top with sprinkles. Chill for at least 3 hours.
