| 5 oz | 142g | Semisweet chocolate |
| 3 tablespoons | 45ml | Low-fat milk |
| 1 cup | 62g / 2.2oz | Whole wheat pastry flour |
| 1 cup | 62g / 2.2oz | All-purpose flour |
| 2 teaspoons | 10ml | Baking soda |
| 1 1/2 cups | 355ml | Cold strong coffee |
| 1/2 cup | 118ml | Madeira |
| 2 tablespoons | 30ml | Unsalted butter |
| 1 cup | 198g / 7oz | Sugar |
| 3 cups | 594g / 20oz | Eggs (medium) |
Spray 60 Madeleine molds with cooking spray.
In a small saucepan melt chocolate in milk and set aside.
In a medium mixing bowl, mix together flours and baking soda and set aside.
In a small bowl mix coffee and Madeira and set aside.
In a large mixing bowl cream butter and sugar together. Add eggs one at a time, beat- ing well after each addition. Beat in flour mixture in thirds alternately with the coffee mixture.
Spoon 1 T batter into each prepared Madeleine mold, and bake in a preheated 350F oven for 10 to 15 minutes. House Beautiful/September/93
