Cherry Coconut Delight Recipe - Cooking Index
1 1/3 cups | 123g / 4.3oz | Flaked coconut |
1 cup | 62g / 2.2oz | Sifted flour |
2/3 cup | 97g / 3.4oz | Fine cracker crumbs - about 14 crackers |
1/2 cup | 99g / 3.5oz | Butter - melted |
1 | Cherry pie filling | |
3/4 cup | 120g / 4.2oz | Brown sugar |
Whipped cream or cool whip |
Combine coconut, flour, brown sugar and cracker crumbs. Stir in butter; mix well. Press half the mixture in bottom of 8x8x2 dish; spread with cherry pie filling.
Top with remaining crumb mixture; press gently. Bake in 350F oven for 30 minutes or until golden. Serve warm, topped with whipped cream or Cool Whip.
