Best Zucchini Bars

1 cup 237mlOil
3   Eggs
2 cups 125g / 4.4ozFlour
1 teaspoon 5mlCinnamon
1 teaspoon 5mlSalt
2 teaspoons 10mlBaking soda
1 teaspoon 5mlVanilla
2 cups 474mlShredded - ungrated zucchini
1 cup 110g / 3.9ozCarrot - shredded (small)
3/4 cup 46g / 1.6ozRolled oats
1 cup 146g / 5.1ozChopped walnuts
  Frosting
1/2 cup 99g / 3.5ozSoft butter
1/4 teaspoon 1.3mlAlmond extract
2 teaspoons 10mlVanilla
2 1/2 cups 495g / 17ozConfectioners' sugar
1   Creamed cheese - softened (3 oz.)

Recipe Instructions

Beat together sugar, oil and eggs in large bowl or in food processor. Beat in flour, cinnamon, salt, baking soda and powder and vanilla. Beat 1-2 minutes until well mixed.

Fold in zucchini, carrot, oats, and nuts; mix well. Pour into 15x10 x1 inch pan (jelly roll pan or cookie sheet with sides).

Bake at 350F for 15-20 minutes. Make frosting by beating all ingredients together until smooth. Set aside. Cool bars; frost. Cut into bars. Yield 3 dozen.
