1/2 cup | 99g / 3.5oz | Margarine - soft |
1/2 cup | 31g / 1.1oz | Soy flour - sifted |
1/2 cup | 31g / 1.1oz | All-purpose flour |
1 cup | 198g / 7oz | Sugar |
1 | Egg | |
1/2 teaspoon | 2.5ml | Vanilla |
1/4 teaspoon | 1.3ml | Baking soda |
1/2 teaspoon | 2.5ml | Baking powder |
1/2 cup | 31g / 1.1oz | Wheat flour - whole-grain |
2 tablespoons | 30ml | Sugar |
1 teaspoon | 5ml | Cinnamon |
Mix margarine on high speed for 30 seconds.
Add soy flour, all-purpose flour, 1 cup sugar, egg, vanilla, baking soda and baking powder. Beat together. Beat in the whole wheat flour.
Chill dough for 1 hour. Shape into 1" balls. Roll the balls in sugar/cinnamon mixture and place on a greased cookie sheet.
Bake in 375F oven for 10 minutes. Cool on a wire rack.
