Bananna-Papaya Fool Recipe - Cooking Index
2 | Bananas - diced | |
1 | Papaya - peeled - seeded and chopped | |
1 tablespoon | 15ml | Dark rum |
2 tablespoons | 30ml | Sugar |
1 cup | 237ml | Cream |
1/4 cup | 49g / 1.7oz | Sugar |
1/2 | Raspberries | |
1/2 cup | 46g / 1.6oz | Toasted coconut |
In medium bowl mix the bananas, papaya, rum and 2 tablespoons of sugar. Puree half of this mixture in a blender and return to bowl and mix well w/ the remaining diced fruit.
Whip the cream until it forms soft peaks then continue to whip while adding 1/4 cup sugar 1 tablespoon at a time. fold the fruit mixture into the cream until it is well incorporated. serve in large chilled goblets or bowls. garnish w/ raspberries and coconut.
