Baked Or Cup Custard Recipe - Cooking Index
2 cups | 474ml | Milk |
1/4 cup | 59ml | Honey - * |
1/8 teaspoon | 0.6ml | Salt |
4 | Egg yolks - ** | |
1/2 teaspoon | 2.5ml | Vanilla or almond extract |

Preheat oven to 300F. Blend together milk, honey and salt. Add egg yolks and beat well. If you want to unmold the custard, add an extra egg. The greater the proportion of yolk, the tenderer the custard will be. If you use 2 egg whites to 1 yolk, quite a stiff custard will result. Add vanilla or almond extract.
When this is all well beaten, pour into a baking dish or into individual custard cups, dust with grated nutmeg. place the cups in a pan of hot water on a rack or in a heavy ceramic baking dish( with hot water). Bake an hour or more for the casserole and 50 or 60 minutes for the cups. Chill and serve with syrup or fruit preserves.
