1 1/2 cups | 93g / 3.3oz | All-purpose flour |
2/3 cup | 131g / 4.6oz | Confectioner's sugar |
3/4 cup | 148g / 5.2oz | Butter or margarine - softened |
3 | Eggs - lightly beaten | |
1 1/2 cups | 297g / 10oz | Sugar |
3 tablespoons | 45ml | All-purpose flour |
1/4 cup | 59ml | Lemon juice |
Additional confectioner's sugar |
Combine flour, sugar and butter; pat into a greased 13x9x2 inch baking pan. Bake at 350F for 20 minutes.
Meanwhile, in a bowl, whisk eggs, sugar, flour and lemon juice until frothy; pour over the hot crust. Bake at 350F for 20-25 minutes or until light golden brown. Cool on a wire rack. Dust with confectioner's sugar. Cut into squares.
