Bake-Sale Lemon Bars

Recipe Ingredients

1 1/2 cups 93g / 3.3ozAll-purpose flour
2/3 cup 131g / 4.6ozConfectioner's sugar
3/4 cup 148g / 5.2ozButter or margarine - softened
3   Eggs - lightly beaten
1 1/2 cups 297g / 10ozSugar
3 tablespoons 45mlAll-purpose flour
1/4 cup 59mlLemon juice
  Additional confectioner's sugar

Recipe Instructions

Combine flour, sugar and butter; pat into a greased 13x9x2 inch baking pan. Bake at 350F for 20 minutes.

Meanwhile, in a bowl, whisk eggs, sugar, flour and lemon juice until frothy; pour over the hot crust. Bake at 350F for 20-25 minutes or until light golden brown. Cool on a wire rack. Dust with confectioner's sugar. Cut into squares.
