Apricot Bars - 2 Recipe - Cooking Index
2/3 cup | 157ml | Dried apricots |
1/2 cup | 99g / 3.5oz | Butter |
1/4 cup | 49g / 1.7oz | Sugar, granulated |
1 1/3 cups | 83g / 2.9oz | All-purpose flour |
2 cups | 396g / 13oz | Eggs (medium) |
1 cup | 160g / 5.6oz | Brown sugar |
1/2 teaspoon | 2.5ml | Baking powder |
1/4 teaspoon | 1.3ml | Salt |
1/2 teaspoon | 2.5ml | Vanilla extract |
1/2 cup | 73g / 2.6oz | Chopped nuts, your favorite |
1/2 cup | 46g / 1.6oz | Coconut, shredded |
Preheat oven to 350F. Rinse apricots and cover with water and boil for 10 minutes. Drain and cool and chop. Combine butter, sugar and 1 cup of the flour and blend together until crumbly. Pack dough into bottom of 8 x 8 inch square baking pan.
Bake for 15-18 minutes, until lightly browned. Beat eggs, vanilla and gradually beat in brown sugar. To the remaining 1/3 cup of flour, add the baking powder and salt and blend well. Add the flour mixture to the egg mixture and blend well. Stir in nuts, coconut and apricots.
Spread over the baked layer and bake another 30 minutes longer. Cool. Cut into bars.
