Apricot Almond Bars Recipe - Cooking Index

1 1/2 cups | 93g / 3.3oz | Flour |
3/4 | Confectioner's sugar | |
1/2 cup | 99g / 3.5oz | Butter or margarine - softened |
1/4 cup | 49g / 1.7oz | Shortening |
Topping | ||
1 | Egg - lightly beaten | |
1/2 cup | 99g / 3.5oz | Sugar |
1/2 cup | 118ml | Apricot preserves |
1 tablespoon | 15ml | Butter or margarine - softened |
1/2 teaspoon | 2.5ml | Vanilla |
1 cup | 93g / 3.3oz | Sliced almonds |
In a mixing bowl, beat flour, sugar, butter and shortening. Pat into bottom and 1/2" up the sides of an ungreased 13x9x2" baking pan.
Bake at 350F for 15-18 minutes or until lightly browned. For topping, beat egg, sugar, preserve, butter and vanilla in a mixing bowl until smooth. Spread over hot crust. Sprinkle with almonds. Bake at 350F. for 15-20 minutes. Cool.
