Apple Date Muffins Recipe - Cooking Index
3/4 cup | 46g / 1.6oz | Whole wheat flour |
1 cup | 62g / 2.2oz | All purpose flour |
1 cup | 237ml | Wheat bran |
1 teaspoon | 5ml | Baking powder |
1 teaspoon | 5ml | Baking soda |
1 teaspoon | 5ml | Cinnamon |
1/3 cup | 48g / 1.7oz | Dates - chopped |
1 | Egg - lightly beaten | |
1/4 cup | 40g / 1.4oz | Packed brown sugar |
2 tablespoons | 30ml | Vegetable oil |
1 cup | 237ml | Low-fat milk |
1 cup | 237ml | Apple; peeled - grated |
In a large bowl combine the whole wheat and all purpose flours, bran, baking powder, baking soda and cinnamon. Stir in the dates. In another bowl, beat the egg with sugar and oil until well mixed, then stir in the milk and apple. Pour into the flour mixture and stir just enough to moisten, being careful not to over mix.
Spoon into nonstick or paper-lined medium muffin tins, filling almost to the top. Bake at 375F for about 20 minutes, or until firm to the touch.
