Flavoring Process For Buffalo Wings Recipe - Cooking Index
1/4 cup | 15g / 0.5oz | Szechwan peppercorns |
1/2 cup | 80g / 2.8oz | Uncooked white rice |
1/2 cup | 20g / 0.7oz | Dry tea leaves |
7 | Star anise - broken in pieces | |
2 teaspoons | 10ml | Ground cinnamon |
2 teaspoons | 10ml | Salt |

1 | Aluminum foil |
Mix all ingredients and distribute between the 5 pieces of foil. Fold into 5"X 2" packets and poke a couple of small holes in the top.
Place 1 packet on top of coals and in a few minutes a fragrant smoke will emerge.
Change the packets every 15 minutes. This particular recipe was made to simulate the flavor of Szechwan smoked duck, but with chicken wings.
While I wasn't necessarily wowed over by this recipe, It sure started the wheels a spinnin'. Just think of some of the flavoring possibilities, especially with some of the lighter types of meat like chicken, fish, maybe pork.
