2 cups | 474ml | Rotini - uncooked |
1 1/2 cups | 219g / 7.7oz | Broccoli flowerets |
1 cup | 62g / 2.2oz | Tomato - diced |
1 cup | 237ml | Zucchini - thinly sliced (small) |
1/2 cup | 73g / 2.6oz | Green pepper - chopped |
1/2 cup | 31g / 1.1oz | Red onion - chopped |
1/4 cup | 36g / 1.3oz | Parmesan cheese - grated |
*DRESSING* | ||
1/2 cup | 118ml | Red wine vinegar salad dressing |
1 teaspoon | 5ml | Dry mustard |
1 | Garlic - minced |

Cook pasta according to package directions. Rinse pasta, drain, and cool. Place cooked pasta in bowl with remaining salad ingredients. In separate bowl, whisk dressing ingredients until smooth and slightly thickened. Pour over salad and toss lightly to combine. Cover and chill before serving. Pampered Chef Favorites II.
