Prune Stuffing (for a 6- to 8-lb goose)

Serves: 1 people

Recipe Ingredients

1 1/2 cups 355mlDried prunes
  (or half prunes and half apricots)
1 1/2 cups 355mlWater
5 cups 730g / 25ozSeasoned dry bread crumbs
3/4 cup 148g / 5.2ozMelted butter
1/2 cup 55g / 1.9ozChopped green pepper or celery
  (or a mixture of the two)

Recipe Instructions

Bring dried fruit and water to a boil, then simmer for 5 minutes. Drain, reserving the liquid. Pit and cut fruit into 1/2-inch bits. Combine with crumbs, butter, green pepper, and celery, and moisten with just enough of the reserved liquid to hold together.
