My Neighbor's Pate Maison

Recipe Ingredients

1 lb 454g / 16ozGame-bird livers
1/2 lb 227g / 8ozLoose pork sausage
1/2 cup 46g / 1.6ozMinced fresh parsley
1/2 cup 55g / 1.9ozMinced celery leaves
2   Onions - minced
1   Egg - beaten
1   Grated mace
  Salt - to taste
  Freshly-ground black pepper - to taste
  Bacon strips - as needed

Recipe Instructions

Put livers through the finest grinder blade. Mix with sausage, parsley, celery leaves, onions, egg, mace, and salt and pepper to taste. Saute 4 strips of bacon until crisp, drain, and crumble fine; add to liver mix with bacon drippings. Pack into a loaf pan and cover top with several more strips of bacon. Bake at 300 degrees for 2 hours; cool on a rack, then chill. Discard bacon strips after unmolding.

This recipe yields 4 cups pate.
