1 lb | 454g / 16oz | Game-bird livers |
1/2 lb | 227g / 8oz | Loose pork sausage |
1/2 cup | 46g / 1.6oz | Minced fresh parsley |
1/2 cup | 55g / 1.9oz | Minced celery leaves |
2 | Onions - minced | |
1 | Egg - beaten | |
1 | Grated mace | |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
Bacon strips - as needed |
Put livers through the finest grinder blade. Mix with sausage, parsley, celery leaves, onions, egg, mace, and salt and pepper to taste. Saute 4 strips of bacon until crisp, drain, and crumble fine; add to liver mix with bacon drippings. Pack into a loaf pan and cover top with several more strips of bacon. Bake at 300 degrees for 2 hours; cool on a rack, then chill. Discard bacon strips after unmolding.
This recipe yields 4 cups pate.
